My Argument to NOT Extend Dalvin Cook

Dalvin Cook halfway through the 2019 season is either 1A or 1B as the team MVP. For good reason! He's on pace for 2,000 all purpose yards and 18 TDs. You could argue he's a top 3 RB right now.
You may be asking yourself, then why are you arguing not to extend him? Shouldn't he be in the team's long term plans? The answer is no, and here are several factors why the Vikings should let him walk after his contract is over in 2020.
Good RBs are expensive!
In this league, every year players break the previous record for highest paid at their position. Here's some of the latest salary cap hits for the best at the position:
Zeke Elliot: 2020 - $10.9 MM 2021 - $13.7 MM 2022 - $16.5 MM - potential out in 2023
LeVeon Bell: 2020 - $15.5 MM 2021 - $13.5 MM 2022 - $15 MM
Todd Gurley: 2020 - $17.25 MM 2021 - $13.2 MM 2022 - $14.2 MM
In order to retain Dalvin moving forward, a conservative estimate is somewhere between $13-16 million a year.
RBs Don't Last Long!
Adrian Petersons are few and far between at the position. Let's look back in time and see the "top" RBs just 3 short years ago...
2016:
Zeke Elliott - Rookie Year
Jordan Howard - Now a part time RB in Philly
DeMarco Murray - Out of Football
Jay Ajayi - Trying to get back into football with no interest yet.
LeVeon Bell - On a new team
LeSean McCoy - On a new team
It's hard to sustain an elite career at this position.
RBs are replaceable!
Just from the eye test alone, would the Vikings really be that much worse if Alexander Mattison was the starting RB over Dalvin this year? Let's take a look back at previous years when he was hurt, and how his replacements did compared to him...
2017: 4 games played for 88.5 YPG average
Latavius Murray as replacement: 11 starts for a 73.09 YPG average
2018: 10 starts for 55.9 YPG average
Latavius Murray as replacement: 5 starts 80.5 YPG average
RBs are Easy to Find in the Draft!
Most of the top RBs we think of this year didn't require a high draft pick to acquire... Sure, there are players like Zeke, Gurley, Barkley, and McCaffrey that were picked in the 1st round. However, there are others like David Johnson (5th), Alvin Kamara (3rd), Austin Ekler (undrafted), LeVeon Bell (2nd) who have been doing big things for a reasonable draft pick.
Conclusion:
While it's nice that Dalvin Cook is breaking out and having an MVP type year, it still isn't enough for me to invest in him long term.
