I don't know about blocking, but whenever he has been used as a receiver I thought he's been quite effective. However the Vikings never seem to want to use him that much in the passing game, which perhaps suggests his inadequacies but we've seen plenty of teams fail to maximize the full skillsets of their players.
that's more from a purely observational standpoint on my part. Just watching the way he catches (stone hands) coupled with not really having a route tree and the unwillingness to use him. He's been pretty much relegated to screen duty and I think part of the reason our screen game has kinda sucked is that it's pretty telegraphed when he does something besides block or get handed the ball.
KOC is WAS in 2019 - 99 RB targets, LA 2020 - 73 targets, LA 2021 - 93 targets. MIN 2022 - 90 targets. So he was pretty much on brand this year.
I keep mentioning Cook's lack of receiving chops but I doubt that's actually a big part of the discussion to be honest. It's kind of my own hang up that I think would add another dimension to the offense if you could get it. Particularly if they up in more 21 or 12 personnel. Like get the base d out there against them instead of nickel or dime and then roll Hock or an RB into the slot. It could even help the O-line a bit where the d-lineman would have more run stoppers than pass rushers in there. You could even go way outside the box and give KJ a bit of Deebo Samuel looks where he lines up in the backfield. He might not have the speed for that though.
